The findings of the kitchen inspection, conducted 05/11/23, are documented in this report. The survey was conducted to determine compliance with the OARS 411-054-0030 for Residential Care and Assisted Living Facilities for Resident Services - Meals and Oregon Health Service Sanitation Rules 333-150-0000.
The findings of the first revisit to the kitchen inspection of 05/11/23, conducted on 08/11/23, are documented in this report. The facility was determined to be in substantial compliance with the OARs 411-054-0030 for Residential Care and Assisted Living Facilities for Resident Services- Meals, and Oregon Health Service Food Sanitation Rules OARs 333-150-0000.
Based on observation and interview, it was determined the facility failed to practice appropriate food and supply storage in accordance with the Food Sanitation Rules OARs 333-150-0000.
Findings include, but are not limited to:
On 05/11/23 at 11:20 am the following concerns were observed during the kitchen inspection:
* Containers of food were not labeled/dated in the refrigerator, items included cooked chicken in a plastic bag, pickles, cranberry sauce, and noodles.
* Dry storage:
- Bag of split peas open to the air;
- Cardboard case of melons were directly on the floor; and
- Cardboard boxes of plastic lids and souffles cups were directly on the floor in office/dry storage area.
* Clean pitchers and measuring cups were stored upside down directly on top of the ice machine with no barrier between pitcher/measuring cup surface and the containers.
The concerns were discussed with Staff 1 (Administrator) on 05/11/23. The findings were acknowledged.
I reviewed with Kitchen Helper that had worked the previous night that he needs to not only write the type of the food on the container lid, but also the date.
I added to kitchen daily check off list to write the date on each container lid, or plastic container. The cook will check each morning to ensure dates were written on items the evening before.
The cooks will ensure peas, beans etc. are placed in the appropriate dry goods storage container and the lid is closed. The cook will check the storage area each morning to ensure things are put away correctly.
The cooks will ensure that the food that was delivered is not left on the floor. The cook will check the storage area each morning to ensure things are put away correctly.
The dry storage area was rearranged to ensure that there is room on the shelves for kitchen supplies. The cook will check the storage area each morning to ensure things are put away correctly.
A cookie sheet was placed on top of the ice machine to place the pitchers on. A clean piece of parchment paper will be placed on the cookie sheet each Monday by the cook.
