The findings of the kitchen inspection, conducted on 9/14/2022, are documented in the report. The survey was conducted to determine compliance with the OARs 411-054-0030 for Residential Care and Assisted Living Facilities for Resident Services - Meals and Oregon Health Service Food Sanitation Rules OARs 333-150-0000.
The findings of the first revisit to the kitchen inspection survey of 09/14/22, conducted 10/25/22, are documented in this report. It was determined the facility was in substantial compliance with the OARs 411-054-0030 for Residential Care and Assisted Living Facilities for Resident Services - Meals and Oregon Health Service Food Sanitation Rules 333-150-0000.
Based on observation and interview, it was determined the facility failed to ensure the kitchen was clean in accordance with the Food Sanitation Rules OAR 333-150-000. Findings include, but are not limited to:
On 9/14/2022 at 10:20 am, the facility kitchen was observed to need cleaning in the following areas:
Food spills, splatters, debris and dirt was observed on surfaces and/or underneath the following equipment areas:
*The dish washing room, including the dish machine, surfaces, walls and floor;
*The stove top, oven, convection oven, steam table, carts, food racks, including shelves below the equipment;
*Vents above the ovens and stove had dust and grease build up;
*Walk-in refrigerator and freezer;
The areas observed which required cleaning were observed by Staff 1 (Dining Room Manager) and discussed with Staff 1 and Staff 2 (Executive Director) during the exit conference on 9/14/2022. The findings were acknowledged.
Three daily nutritious meals are being served as well as nutritious snacks available seven days a week and overseen by a Nutritionist from Crandal.
Menus are printed and available in weekly form and daily posted.
Dishwashing room was cleaned and cleaning schedule is being adhered to.
All surfaces cited were cleaned immediately.
Vents were cleaned and cleaning schedule being maintained.
Walk in Fridge and Freezer were cleaned and organized.
Cleaning schdules are being monitored by Executive Chef 3 times weekly. Sunday, Tuesday and Thursday.
Menu's are printed by reception and checked by Supervisor to ensure availability.
Any substitutions are documented for Nutritionist review.
Residents are informed of any substitutions in a timely manner.
Fridge has temp log posted and being monitored. Maintenance to inspect and ensure thermostat is correct. To be evaluated Daily by medtec and weekly by RCC.
