Description: The facility failed to follow resident services outlined in OAR 411-054-0030 for food service requirements: Facilities must provide three nutritious, palatable meals daily, plus snacks, in line with USDA Dietary Guidelines, including fresh fruit and vegetables. Modified special diets are available when needed, prepared correctly, and residents should be involved in menu planning. All food must follow OAR?333-150-0000 (Food Sanitation Rules) during preparation and service. During Food Preparation and the kitchen is open for service a PIC needs to be in charge to ensure correct food handling occurs, proper diets are provided, food is put away correctly to avoid bacteria growth and/or pest, kitchen needs to be clean and good repair.
